Every day at 2 a.m. at Rungis, Olivier Ballan buys the best. The Poissonnerie du Bac's product range includes fine fish, shellfish, line-cut turbot steaks, live langoustine bouquets and Gillardeau specialties. Seafood is cooked and prepared on request, and a small catering department is available at weekends, offering risotto, bouillabaisse and crab salad.
