Winner of the 2017 award for originality at the Salon du Chocolat, Karen produces fabulous chocolate bonbons. These include pure-origin ganaches from Madagascar, Ecuador and the Dominican Republic, spiced ganaches with Sichuan pepper and Tonka bean, and gourmet pralines with lemon anise, peanut fleur de sel, pecan and sesame. Karen is always on the lookout for new flavors, such as Beaujolette, a ganache with Beaujolais, blackberry and mint, or her famous Apérolats, the first range of savory aperitif chocolates to be enjoyed with a glass of grand cru white wine.
