Cheese dairy Helpful and unfailingly kind, Pascal Charazac, who took over from Hervé Miane at the very beginning of 2024, while maintaining the renowned brand, looks after its treasures with a passion that he shares. The store isn't huge, but he knows every cheese, its history and provenance, and the varieties on offer retain the quality offered in his predecessor's day.
