Behind the old-fashioned façade with its gold lettering lies a compelling story about the shop’s values—including flours made from heirloom varieties, nutritional quality, and environmental responsibility—all of which appeal to city dwellers weary of pollution. Indeed, the dough is beautiful and baked just right, with house favorites already on the menu, such as the Tradition, the Legendre, rye, buckwheat, einkorn, and khorasan, as well as excellent pastries and delightful cookies.
