What began as a bit of fun or a children’s pastime grew into a calling: making cookies. Dhardelot Biscuitiers is a family story—that of the De Brick family, whom people in northern France know from the Beussent Lachelle chocolate factory, which they have since sold. Today, using mostly local ingredients, they produce shortbread, financiers, Dhardeleine (a round madeleine), cookies, marshmallows, and rochers.
