Of course, all the classic cheeses are there—many of them are even aged in the cellars—but what’s truly captivating about this cheesemonger is her ability to unearth hidden gems from all over the French countryside, including farmhouse Tarentais, Lingot de Cocagne, Pavé de Richelieu, Barotière fermière, and Bûche fermière du Poitou.
