"Ici, on fait l'andouille", as it says on the sign. But we also make boudin, and good boudin at that. The quality of this dense black pudding is superb, with a wonderful seasoning that holds up well to cooking. Excellent charcuterie (the head pâté), various confections, salads and prepared dishes.
