Butchery Classified as a historic monument, Nantes' Talensac market is home to a young butcher who works with all meats except poultry, the specialty of his brother Richard, who has set up shop in the nearby market. Every Monday, Benoît goes to the abattoir to choose his Blonde d'Aquitaine, raised mainly in the Vendée region, his Lamb du Pays nantais, most of which comes from the family farm, and his Label Rouge veal.
