Pastry The new rooster crow is the brainchild of Yoshiaki Kaneko, a former pastry chef in Japan who had a revelation while leafing through a dessert book. Trained by renowned French pastry chefs, he moved to Versailles, where his passion for pastries grew out of chance. His inspiration is French: cinnamon roll with light puff pastry, pistachio/apricot roll, and if the rolls are reminiscent of spring rolls... they have a "worldfood" composition, like the yuzu saint-honoré... which leaves us to hope for a long life full of creative inspiration.
