Beschreibung

Nicole Barbe Ponsardin became a widow at the age of 27 and gave her credentials to this house founded in 1772 by her husband. This was possible due to her talent as business woman, her personality and her technical choices. In 1987, this 393 hecatre-house got acquired by the LVMH group who made it into the second most productive brand in volume. The cellar master Dominique Demarville who quit at the end of 2019 did a remarkable work for such a huge quantity of champagne. He managed to bring more finesse to a vinous style as a result of to the important part of Pinot Noir in the blends. Didier Mariotti, previously at Mumm, succeeded him. Taittinger is a safe bet when it comes to champagne especilally as the last cuvéee EBEO 2 has been just superb.

This Rosé offers a very beautiful and complex nose with aromas of raspberries, cherries, Sichuan pepper as well as a fresh lemony taste and a well-managed slightly smoky note. On the palate, this champagne is lively on the attack, vinous on the mid-palate and sapid on the finish. A really fine Rosé with a strong character.

A Grande Dame still in her prime. The complex and very fine nose combines notes of citrus, white fruits, white flowers and pastry. On the palate, the wine is straightforward, balanced, with a clean and ethereal fruit. The structure is already present and still in the process of becoming even more ample. A Grande Dame that can wait patiently in the cellar or be served now with its balanced finesse.

This recognizable cuvée is a complex blend of 60 parcels and 3 grape varieties, to which is added 3 years of cellaring, offering us a wine of inimitable style. The golden robe with silvery reflections is enlivened by fine and numerous bubbles, leading to a nose where Pinot Noir and Meunier offer lovely vinosity, and after aeration aromas of apple, pear, dried fruits, lemon cake, vanilla, graphite and citrus. All this panoply is also found in the mouth with rich and honeyed matter on the attack, then a more airy finish, thanks to the Chardonnay. Open with a salmon tartare with dill, and a citrus vinaigrette.

One of the great vintages of the beginning of this century, this cuvée is blended with the best Chardonnays and Pinots Noirs. The colour is crystalline in shades ranging from gold to silver with bright green reflections. The mousse is dense when served and the bubbles are fine and relaxed in the glass. A good sign ! The nose is vinous and delicate at the same time, with aromas of peach, stewed pear, coffee beans, smoke, medlar jelly, dried fruits and fresh butter. It is never ending. The same creamy smoothness of the mousse is found in the mouth with a rich textures and thirst-quenching bubbles. A hint of white truffle, honey and quince jelly are added to the same notes as found on the nose. Long, very long. Superb. A great shellfish will make a happy marriage

Carte Jaune is a blend of the three Champagne grape varieties to which 12% of red Coteaux de Champagne is added, hence a rosy colour of beautiful intensity, a true Clicquot signature of salmon nuances, with copper and raspberry reflections. The mousse is dense and the bubbles are fine, and the nose is floral (freesia, peony), fruity (wild strawberry, blackberry, raspberry), with praline brioche when aired. On the palate, the wine is rich and suave, awakened by fine bubbles, framed with the same red fruits and a pleasant raspberry tart side. A long mineral finish. One of the best rosés we know. Enjoy with roast duck with cherries.

The nose reveals delicate notes of honey, aromas of Mirabelle plums and a clear freshness. This cuvée is promising right from the start. On the palate, the wine's vinosity is balanced by a final tension. The art of blending takes on its full meaning. This is a sapid, fresh, elegant champagne that would go well with crayfish on the brazier.
