Description

The Jaury family was already exploiting their vineyards when Roland Moyat arrived in Polisy to live with his great uncle and aunt, who later adopted him, hence the joint name Moyat-Jaury. Claudie, Roland’s daughter, settled on the domain and developed the viticultural activities. Vinification and marketing followed when Laurent Guilbaud arrived.

The pleasant nose of this Chardonnay reveals notes of white fruit and citrus. The wine offers a remarkable acidity and appetizing bitter notes. Unfortunately, the dosage in sugar is a little too high, to the detriment of the freshness. It could nonetheless be paired with an exotic dish, such as chicken curry and coconut milk.

This wine, entirely issued of Pinot Noir, presents a beautiful golden yellow colour. The nose shows notes of evolution with aromas of wax and encaustic. The palate is tonic, powerful and refreshing with a chalky texture. The extra brut dosage being ideal, this champagne reveals complex aromas of nuts and spices. This cuvée would match well with tournedos Rossini.

This Rosé, made from the saignée method and issued from the 2014 harvest, presents a beautiful salmon pink colour and a fruity nose. On the palate, the wine is dense, rich and ripe, and reveals delicate flavours. The dosage is precise and the balance is perfect between minerality and rich taste. This reserve rosé would match well with a framboisier (sponge sandwich cake filled and topped with raspberries).

This cuvée, made from the 2015 harvest and composed of a majority of Pinot Noir plus 20% Chardonnay, shows on the nose intense aromas of ripe fruits. On the palate, the wine is rich and caressing, with a sapid and chalky finish. This is a fine piece of work. It could be served over the aperitif with gougères (small cheese puff pastries).
